Grazing freely in the Texas Hill Country, our Iberico pigs forage on native grasses, acorns, prickly pear cacti, and their favorite, mesquite beans. The result is a beautifully-marbled pork, naturally rich in color.
Texas Iberico Jamón is reminiscent of prosciutto but with Texan flair. Its flavor is rich, subtly sweet, and nutty, with a delicate, melt-in-your-mouth texture.
To craft our Texas Iberico Coppa, we cure whole muscle coppa with honey & the chili pequin pepper, to enhance its robust flavor, spiciness, and tender texture.whenever possible.
