About Texas Iberico

Pasture Raised in Texas

Our 100 % Iberico breed pigs are raised on the Trail's End Ranch in the Texas Hill Country by rancher and owner Ashly Martin.  They spend their days roaming freely, eating acorns, grass, herbs, sweet mesquite beans, prickly pear fruit and any other goodies they can find. Their diet infuses the pork with intense flavor, and plentiful exercise means the pork is marbled with flavorful fat, perfect for making delicious cured meats.

Pasture Raised, Animal Welfare Approved

 With an active lifestyle and exceptional genetic characteristics, Iberico pigs produce some of the healthiest meat available anywhere.  Texas Iberico® pasture-raised pigs are never given antibiotics and our pork is Animal Welfare Approved, acknowledged by Consumer Reports as the only “highly meaningful” food label for farm animal welfare.

Pure Bred Iberico

   These extraordinary pigs trace their lineage back to the time of the cavemen and are particularly suited for outdoor living. The cerdo Ibérico (Iberian pig) has a different genetic makeup than industrial pigs. These animals transform their diet – acorns, fresh grass, mesquite beans and prickly pear fruit – into heart-healthy fats much like extra virgin olive oil. That’s how Iberico pigs got the nickname "four-legged olive trees."  Breeding stock was flown in from Spain in 2013 and our herd has 6 different strains of Iberico, providing vigorous genetic variation and a healthy herd.  The hot Texas summers are similar to those in Southern Spain.  

2021 & 2022 Good Food Awards - a Winner and Two Finalist

We won the 2021 Good Food Award for our Sweet Prickly Pear Cured Lomo, and our Honey & Chile Pequin Cured Coppa was a finalist in 2021.


Our Guanciale was a finalist in 2022.


Rising to the top amongst 1,928 entries in 16 categories, we are delighted to stand amongst the  farmers and food crafters that are leading the way in quality, sustainability and socially responsible production.

Meet Our Curemasters

 Our Artisan curemaster Kevin Ouzts of The Spotted Trotter is passionate about New World Charcuterie. And our Artisan curemasters Ronny and Beth Drennan of  Broadbent Hams continue a curing tradition dating back to 1920.


The result is a unique and refined line of cured meats that reflect the marriage of an ancient breed with a new approach to building flavor and as Kevin would say, unprecedented 'salami for the soul.'
