At Texas Iberico, we believe in pushing flavor boundaries—and this cocktail does exactly that. By infusing bourbon with the rich, smoky fat from our oak-smoked bacon, we’ve created a bold, savory base that transforms the classic Old Fashioned into something unforgettable.

FAT-WASHED BOURBON
Ingredients:
- 3–4 slices Texas Iberico Oak-Smoked Bacon
- ~1.5 oz rendered bacon fat
- 750 ml bourbon (we like Still Austin for a local match)
Instructions:
- Cook bacon until crisp, then reserve approximately 1.5 oz of the rendered fat.
- Pour the bourbon into a large mason jar and stir in the warm (not hot) bacon fat.
- Let the mixture sit at room temperature for 4 hours to infuse.
- Transfer the jar to the freezer overnight.
- Once the fat has solidified on top, skim it off.
- Strain the bourbon through cheesecloth or a coffee filter to remove any remaining solids.
- Store sealed and refrigerated until ready to use.
TEXAS IBERICO SMOKY OLD FASHIONED
Ingredients:
- 2 oz bacon-washed bourbon
- ¼ oz maple syrup or smoked simple syrup
- 2 dashes Angostura or chocolate bitters
- Orange peel, for garnish
- Optional: Crisped Texas Iberico bacon, for garnish
Instructions:
- Combine bourbon, syrup, and bitters in a mixing glass filled with ice.
- Stir until well-chilled and diluted (about 20–30 seconds).
- Strain into a rocks glass over a large ice cube.
- Express the orange peel over the glass and drop it in.
- Garnish with a bacon crisp for a bold finishing touch.
