The Iberico pig is a heritage breed with more than twelve thousand years of history. Originating in the Iberian Peninsula, these pigs are known for genetics that allow them to naturally store fat within the muscle. This intramuscular fat creates pork that is richly flavored, tender, and deeply satisfying.

The terrain, climate, and vegetation of the Texas Hill Country closely resemble the environment in which the Iberico breed evolved. This makes it a natural place for these pigs to thrive and express the qualities that define the breed.

Outdoors and Free to Roam

Texas Iberico pigs live outdoors on rotating pastures at Trails End Ranch. They forage on live oak acorns, prickly pear cactus, mesquite beans, juniper, and native grasses that grow naturally in the region. This diverse diet contributes directly to the depth of flavor and marbling found in the pork. In addition to foraging, pigs receive a carefully formulated supplemental feed to support balanced nutrition and healthy growth.

Our pigs are raised for up to eighteen months, significantly longer than conventional pork production timelines, allowing for natural growth, movement, and muscle development. This extended time allows for natural growth, movement, and muscle development that cannot be rushed.
